Ingredients:
• 12 egg yolks
• 250 ml (1 cup) sugar
• 3 cinnamon sticks
• Grated rind of 2 lemons
• 4 cans (380 g each) Nestlé Ideal Low Fat Evaporated Milk
• 50 ml cornflour
• 200 ml caster sugar
• Nestlé Dessert Cream to serve
Method:
- Whisk the egg yolks and sugar until thick and pale. Add the cinnamon sticks and lemon rind.
- Mix the evaporated milk and cornflour and add to the egg yolk mixture. Pour into a saucepan and, stirring continuously, heat slowly until the mixture just begins to thicken.
- Remove from the heat and remove the cinnamon sticks. Pour into 11 ramekins and leave to cool for 2 – 3 hours. Sprinkle the caster sugar on top and caramelise with a kitchen blowtorch or under the oven grill.
- Serve with cream.
